Follow with a beefy celebration roast

If you read my previous post, you will know that I am focusing on recipes that I created when I made our Christmas Feast. My tarzan is still dreaming about this. I always thought that I will never meet anyone else that enjoys a roast as much as him, but that was until I met our friend Daniel and his wife Emily. These two are from Venezuela, and I am telling you, they probably love their meat just as much as South Africans, if not more!

This was one of the reasons why we had such a meat feast on Christmas day, yes, my feeder symptoms are getting worse!

I remember the first time I had to cook a beef roast – I was terrified! From when I can remember, I have never seen my mother, or anyone else for that matter cook a beef joint. I think it is just not a popular choice in SA. However, I quickly found out that over here it is on top of the list! The secret to cooking a big beef joint is to make sure it is still pink inside.

The first time – I made the mistake to cook it as you would a pork shoulder – for a few hours.  With a beef roast, it only needs a maximum of an hour ( in my opinion), depending on the size. You guessed it, today I will share my beef roast recipe! If, as in my previous post, you DO have the time, take 200ml of the wine from the recipe, pour over the joint, cover with cling film and allow to marinate in the fridge overnight.

Coriander, rosemary and red wine Beef Roast

1 x Beef roast joint (2-3kg)

1 teaspoon ground coriander

2 1/2 tablespoons of whole coriander seeds, roughly ground in a mortar & pestle

400ml red wine (preferably Shiraz)

1 tablespoon of olive oil

3 sprigs of  fresh rosemary

2 teaspoons of chopped garlic

pinch of salt

pinch of black pepper

1 large onion

Something that I have learnt over the last year ( which most of YOU probably knew already) is that it is always good to remove your meat from the fridge at least 30 – 45 minutes before you start preparing it to go into the oven. Its almost like the texture and flavour changes because of this. So, remember to take it out of the fridge. If you have marinated it overnight, remove it from the red wine, pat dry with kitchen towel and place on a work surface.

Preheat your oven to 170 degrees celcius. Get your roasting tin. Cut your onion in half. Place both, cut side down, along each other in the tin ( the distance of the size of your beef joint) as this will be the “foundation blocks” for the joint. The joint’s ends will be placed on the onion halves, allowing it to be lifted from the tin slightly.

Take all your spices (excluding the rosemary), salt & pepper and mix with the olive oil and garlic in a bowl. Now comes the messy part – scoop the mixture into your hands and massage it all over the joint. Place the joint on the onions. Now, pur the 200ml red wine ( or 400ml if you didn’t marinate overnight)  around the joint and toss the fresh rosemary in the wine, around the joint.

Cover with foil and place in the oven for 45 minutes. Then, remove the foil, baste the beef with the red wine juices and place back in the oven for another 15 minutes.

A move(d)able feast

Again, I am behind on my entries. I have been saving my favourite one as a little “cheery up” tool for myself in this dull grey London. Usually, when we dont travel to South Africa to spend Christmas with our family and loved ones, I invite all our friends in London that are here over Christmas, including our only family, my sister in law, and I revel in the fact that I will have a big, decorated table groaning under all the food that I have prepared with love the whole morning.

Usually I start planning the menu and designing it about 2 months before christmas. This ensures that I can still send out invitations in plenty of time before everyone gets hustling and bustling around. Naturally, it was crazy with everyone around and making sure everything is ready.. so taking photographs of all the dishes was not very high up on my list. However, over the next week or so I will be posting recipes from some of the other dishes from our Christmas feast!! For now, I think I will start with the lamb.. Celebration Lamb

1X 250 ml buttermilk
1 X leg of lamb ( 2-3 kg)
2 hands of pitted, green olives
3 cloves of garlic, thinly sliced
1 tablespoon of olive oil
2 tablespoons of herbes’ d Province

2 teaspoons of ground cumin
juice of one lemon
500ml of dry white wine
1 sprig of rosemary
160 Degrees Celcius

If you have time  to leave the meat to marinate overnight – then you will be using the buttermilk. Take your leg of lamb and place it in a fitted dish that can fit in your fridge. Now, pour the buttermilk over the lamb, checking that it is covered all over. Cover with clingfilm and place in the fridge over night. The next day, when you are ready to start on the lamb, make sure you remove it from the fridge about 30 minutes before you start on it. Rinse the lamb, making sure you remove all the buttermilk and pat dry with paper towel. Place the lamb in a roasting dish.

Take a very sharp knife with a small, fine end, and start piercing small holes deep eoungh to push the pieces of garlic in, about 10 – 12 holes. Now, divide your garlic slices between the holes you pierced. Make sure that the garlic slices are quite deep in the pierced holes, so they won’t fall out.Pour the lemon juice over the lamb. Take the olive oil, rub it between your hands and massage into the lamb. Now, grind over salt and black pepper. Sprinkle the herbs and cumin over the lamb and massage into the lamb. Take your sprig of rosemary and place it in the middle of the lamb in one of the holes that were pierced.

Toss your olives around the lamb and pour over the white wine. Cover with foil and place in the oven for 1 hour. After one hour, scoop the juices from the roasting dish and baste the lamb with the juices. Cover with the foil again, cooking for another 40 minutes. Remove the foil, baste again and place in the oven for a final 30 minutes, and your done!

What the heck, lets have pork neck

Unlike the flavourful dish I will talk about shortly, I would like to give you the true definition of a pig and how it is part of my morning, every morning. No, not the lovely crispy bacon, this pig is alive 🙂 PIG: A pig is any of the animals in the genus Sus, within the Suidae family of even-toed ungulates. Pigs include the domestic pig, its ancestor the wild boar, and several other wild relatives. Pigs are omnivores and are highly social and intelligent animals. As you might have realized, these pigs dress up in suits in the morning and tramp all over you to get on the train. They are also omnivores, which means, they will basically eat you alive! Their second, more well known name would be – middle aged bankers, on the overland rail.  Highly intelligent creatures, but that is about it, for an animal 🙂 For some reason when I always get angry in the morning, I always feel better when I know we will enjoy pork for supper 🙂 There is something very satisfying in teaching a piggy some manners. Marinate it, cook it properly and it is the most well-mannered taste that you will enjoy for the day 🙂

Hey, pigs have great taste ;-p  Simply put, I am not a happy camper after having to go back to work after bank holiday, so obviously there will be a bit of negativity 🙂 Well, skip that part because the positivity just came back after I enjoyed a lovely supper 🙂 This is a love and leave dish – for the pork that is. I am sure you will enjoy this and all negative spirits will disappear!

One pack of pork neck steak

One whole garlic’s cloves, lightly crushed

2 tablespoons of olive oil

salt & pepper

1 twig of fresh rosemary

handful of twigs of fresh thyme

30ml dry white wine

1 tin of tinned, chopped tomatoes

30ml balsamic vinegar

juice of half lemon

4 spring onions, snipped

1/2 leek, roughly chopped

2 handfuls of mushrooms, roughly chopped

1 red pepper finely chopped

1 teaspoon crushed garlic

1 teaspoon of olive oil for the sauce

Preheat your oven to 180 degrees Celcius. Place your pork on a non-stick baking tray.

Flavour with salt and black pepper. Toss around your garlic. Sprinkle your thyme and rosemary over the pork. Drizzle with your olive oil. Now place in the oven and cook dor 30 – 35 minutes, or until golden and cooked. While this is cooking, add  the remaining olive oil to a frying pan.

Add your crushed garlic, leeks, spring onion & red pepper to a frying pan. Now fry for about 8-10 minutes. Add your mushrooms. Fryn until almost done and flavour with salt. Add the white wine. Mix through and allow to simmer.

After 10 minutes, add your tinned tomatoes, balsamic vinegar and lemon juice. Flavour with salt according to your personal taste. Meanwhile, you can cook some pasta, I used orzo pasta, as your base for the pork and sauce.

When your pork is done, take it out of the oven. Place your orzo in your plate. Place the pork on top of that and top it off with your lovely sauce. Enjoy with a simple veggies or a side salad 🙂

Heart warming Sunday Chicken for Jo

Sounds very simple, but if you think about it, it is usually the simplest things that you remember. There are many things about this recipe that reminds me of my friend Jo, which has a very special place in my heart. Garlic, a very strong, overpowering ingredient, but you can add it to anything and it will turn a so-so dish into a winner! Chicken, an underestimated main ingredient, might sound boring, but it is always a success, giving  you strength and rejuvenates you when you have flu and warms a cold, tired and weak  body. Potatoes, a true and rich indulgence, fluffy, creating instant happiness for anyone!!

Jo is exactly like all these ingredients. Like Garlic, she is full of surprises – strong, but also sweet and can lift anyone up and you know she is always there to make things better. Like chicken, she has enough love and care to spread between all her friends and family and you know she is always there to come to the rescue if anything goes wrong or puts you in a swizzle.

Like potatoes – she is comforting, always there to give a hug when needed and envelops you in a cloud of calming conversations. I miss her dearly this beautiful friend of mine. This is also her dish today as she loves the “one pot wonders”. I know she totally adores a lovely and hearty casserole! However, a few months back she got sick after eating chicken. I wonder if this had anything to do with her now expecting a little bambino? ;-p All the more why I know she will love this recipe as she is in the mood to eat and enjoy lovely, fresh, old fashioned hearty food. Especially since it is winter in South Africa at the moment.

She is one of my friends that loves delicious food, and believe me, she can prepare it, but she would rather sit around a table and chat with her friends while there is something cooking in the oven that will look after itself, but be an absolutely winner when finished! I really wish I could sit down at a beautifully decorated table, with a lot of candles, beautiful food and lovely conversation with my dear friend. This will have to wait until December, when I assure you we will be doing this exact thing, but by this time, she might be able to balance her teacup on her beautiful belly! So Jo, this one is for you 🙂

1 whole chicken

1 tablespoon of butter, softened

1 lemon, cut in half

3 whole Garlic bulbs

Olive oil

5 red rooster potatoes, cut in quarters

1 twig of rosemary

Black pepper

Salt

handful of mushrooms

2 courgettes, roughly chopped

1 aubergine, roughly chopped and salted

2 onions roughly chopped

1 teaspoon of chopped garlic

1 tin of chopped tomatoes

1 teaspoon of sugar

Garlic drizzle sauce

1/2 glass of dry white wine

2 tablespoons of butter

cooked garlic cloves

juice of one lemon

Preheat your oven to 190 degrees Celsius. Rub your chicken with the butter, almost like massaging ;-p Season with salt and pepper. Season the inside of the chicken with salt and pepper. Now place the two halves of the lemon inside the chicken.

Cook the chicken for 30 minutes. While the chicken is cooking in the oven, boil your potatoes in salted water for 8 minutes. While this is boiling, drizzle a frying pan with oil and add the garlic. Gently start frying your onion. Now add your courgettes and fry for about 8 minutes. Add your aubergine. Fry for another 8 minutes. Add your tinned tomatoes. Flavour with salt and pepper and mix in your sugar. After your chicken has cooked for 30 minutes, remove from the oven and arrange your potatoes and mushrooms around the chicken.

Place your garlic in between the potatoes and mushrooms. Drizzle olive oil over each whole clove, generously. While the chicken cooks, it will make extra juices, along with the olive oil, so use this and mix through the potatoes so they are coated in these juices. scatter the leaves from the rosemary twig around the potatoes. This sounds like a lot of garlic, but remember, when garlic cooks in its skin, it becomes sweet 🙂 Now, return the tray to the oven and cook for another 40 minutes or until the juices run clear.

Take the cooked garlic and place in a small pan with the butter,lemon juice and white wine. press down with a wooden spoon onto the garlic to allow all the juices to flow out. Now sieve it through onto the chicken and potatoes etc. Enjoy with your ratatouille with this lovely chicken, and if you want to, feel free to enjoy with some rice or cous cous!  🙂

Peachy pork

Yup, you know it! Everything is peachy! Even my pork ;-p Well, maybe not the weather. If I had to get a mental picture while eating  a peach, I would imagine lying on green, floaty grass with the sun shining on my face, and.. well, this is London and even if it is summer, there is no sun. Lucky for me, I had a lovely day and enjoyed working again and helping out a few people. It just shows you what the right atmosphere can do to improve your mood! 🙂 Happy thoughts!

It might also be that I had a construction worker screaming after me this morning, in a VERY heavy irish accent that I “Looked more beautiful than anything he had seen that morning”! Usually I would greet this with a stare that could kill, but this morning I actually started laughing! Sometimes London puts on its tutu dress and dances like a lovely ballerina!

Yesterday I bought some peaches, a whole punnet, for only £1! Add to that, a pack of pork steaks for £1.43 and it already creates happy rays of sunshine in my life!! So, sitting at work today in my happy mood, I fantasized about lovely, juicy ripe peaches, a delicacy to me 🙂 Needless to say, after biting into one when I got home, there was nothing delicate or sweet about these evil buggers! Looks can be deceiving! Then I thought, if I added a little love and sweet words of encouragement, they will turn into a lovely, colourful and sweet surprise of  luscious infusions 🙂

To top this, was a picture in my mind of the one and only licking his plate clean….. as happy as a pig in mud! Which, I am very proud to say, he did! Who needs a puppy when you have your own true love cleaning his plate like that ;-p By now, after all this mumble jumble, I still have not mentioned what I cooked! So here we go: Peachy pork steak with carrot & cabbage fritters… and like our family like to call it.. “flied lice” ! ;-p  Fried rice for those of you that get a terrible mental picture right now ;-p

3 – 4 pork steaks

2 peaches, roughly chopped

2 tablespoons of butter

1 teaspoon of sunflower oil

1 clove of garlic, grated

1/2 teaspoon of ginger, grated

4 tablespoons of honey

1 tablespoon of white wine vinegar

1 teaspoon of finely chopped, fresh rosemary

1 spring onion, finely chopped

Fritters

1 carrot, grated – medium size “grater”

1 cup of cabbage, grated – medium size “grater”

1 tablespoon of flour

2 eggs

1 teaspoon sweetner/caster sugar

Pork

Place your butter, ginger, garlic, oil, rosemary and spring onions in a pan. Fry for 5 minutes. Place your pork steaks in the pan and allow them to brown on the one side. Add your peaches. Shake them around in the pan. After the steaks have gone golden, turn them.

Add your vinegar and honey and mix around so that the steaks and peaches get coated in this sweet sauce.

Taste and season with a little bit of salt.  All the while, while your steaks are getting their lovely colour, mix all the ingredients together for the fritters. Heat oil in a pan, enough to be more than a slight layer, but not as much as when you would fry chips. Make sure the oil is hot enough. Take a tablespoon and use this to place small oval shapes in the oil until they become brown and crispy and turn them over. Place on some paper towel to absorb the extra oil.

Serve up with your pork steaks, egg fried rice and the lovely sticky sauce! Heaven!
